Random question - how exactly is tofu made and which brands are ok to buy at the supermarket (meaning safe) here in China? I am always worried that it could be contaminated or dirty - I guess that is why I am asking how exactly is it made?

Hi maria... I have no idea!!!! My advice would be to ask and trust your ayi - mine is so delighted by the (in her eyes) limitless amount of cash I am willing to spend on tofu that I'm sure she buys us only the very best

Lol I once bought tofu and my ayi told me off for buying the wrong sort so I definitely agree with asking for her advice! Apparently people even make it at home so good to check for the quality of water used etc - i guess that pretty much excludes buying it from your local market but don't know if others would agree or not

Thanks Sandra. Do you actually know how tofu is made? What ingredients does it have? I am quite concerned that since it is processed and packaged, it could be made with nasty stuff. Yes, I know, I am very distrustful, but not being able to read the labels makes me even more careful.

One thing I've noticed is that even the packaged tofu here has a very short used by (1 or 2 days) printed on the packaging as apposed to weeks/months back home, which makes me think that it *may* be fresher or with less preservatives. Totally and uneducated assumption though, and this says nothing about heigene or sanitation...
